Because it's not necessary and exposes you to unneeded danger by having the car in the air instead of firmly on the ground?

If you don't drain the oil it comes out of the heads onto you as you adjust the valves if the car is jacked up, better be on good stands too.

I have never jacked up a VW to adjust valves, doesn't seem necessary.

I never have either. Mostly I was curious why St. John the Muir was so adamant that I not.

Haven't read my Idiot Book in decades, and it's currently out of reach in storage. What adamantine phrasing did St. Muir employ to discourage the jack-happy?
