Do these valves/heads appear to be in good shape? Any signs of valve seat recession? I'm hoping they need nothing more than a good cleaning before being put back into service.

You know that photographs cannot see where you need to check. Exhaust port or combustion chamber cracks? Clean squared machined edges at the ledges where the barrels contact the heads?
You will need to rent a valve spring compressor and release the valves so the stem is flush with the guide, then rock the valve sideways. More than .030" rock side-to-side is new *guides*, a common and critically necessary replacement to keep the valves/seats happy.
